For a salad, a gratin, stir-fried vegetables, or homemade fries, the requirements are not the same. Start by choosing the desired shape: slices, julienne, diced, grated, spirals, or sticks. Then, check that the model actually has the corresponding blade or accessory.
A mandoline or a vegetable slicer may be suitable for cucumbers, zucchini, potatoes, and other foods compatible with the model. Some utensils offer adjustable thickness, while others have a fixed cut. Check the range specified on each product sheet: it is not identical for the entire collection.
Julienne corresponds to thin strips, while sticks are generally thicker. These cuts require a suitable blade or grid. A French fry cutter can prepare sticks without allowing for a fine julienne, and a julienne mandoline does not necessarily replace a French fry cutter.
To prepare diced pieces, choose a model equipped with the accessory designed for this purpose. The size of the pieces depends on the grid and the prior preparation of the food. It may be necessary to cut the vegetable into suitable portions before inserting it. Do not force food that is too large or too hard.
A grater allows you to prepare carrots, zucchini, or other sufficiently firm ingredients, depending on its surfaces. Compare the perforations and the textures offered. Fine grating, coarse grating, and slicing are distinct functions: a single accessory does not necessarily perform all three.
A spiralizer works the food by rotation to form spirals or ribbons, depending on the blade. Check the compatible dimensions, the mounting system, and the included accessories. A julienne peeler tends to produce strips as you work: its operation and result differ from those of a hand-cranked spiralizer.

Compare the footprint of the assembled set, the space required for accessories, and the retention system. A suction cup requires a compatible surface; a non-slip base does not eliminate the need to stabilize the utensil properly.
Install the blade and adjust the thickness before starting. Use the pusher, finger guard, or provided holding device according to the instructions. Keep hands away from the cutting area and stop when the piece can no longer be held correctly. These accessories do not eliminate the risk of cuts.
If food gets stuck, stop the movement before clearing it according to the manufacturer's instructions. Do not push it with your fingers against the blade. Avoid frozen foods or those incompatible with the model.
Remove residue after use and disassemble only the parts designed for this purpose. Clean the blades with a suitable brush, without running your fingers over the sharp edges. Dry the components and store the blades protected and out of reach of children. Check the manual for dishwasher safety: the presence of stainless steel does not guarantee that all parts are compatible.
