A cutting board with two preparation sides

This double-sided cutting board combines a stainless steel surface with a silicone side. It can be used for preparing fruits, vegetables, meat, or fish, provided the surface is properly cleaned between different types of food.

Both sides offer different sensations during preparation. The flexible silicone side can help limit the board's movement on certain surfaces, but always check its stability before you start cutting.

Choosing the right side

1. Place the board on a clean, flat, and sufficiently clear countertop.
2. Choose the side suitable for your preparation, then check that the board does not move.
3. Use an appropriate blade and cut while keeping your fingers away from the knife's path.
4. For raw food, clean the board before preparing ready-to-eat foods.
5. Remove residues after each preparation and do not let food juices accumulate.

Hygiene and daily use

Stainless steel and silicone must be cleaned after each use. To limit cross-contamination, use a clean board for ready-to-eat fruits and vegetables after working with raw meat or fish, or clean the surface thoroughly before switching preparations.

Do not consider a clean surface a guarantee of food safety: wash food, hands, and utensils, and follow standard storage and cooking rules. Do not use the board for very hot food or as a cooking surface unless the instructions permit it.

Cleaning and storage

Rinse the board after use, then clean each side with hot water and a food-safe detergent. Dry it completely, especially around the edges and joints, before storing. Check the manufacturer's instructions to see if it is dishwasher safe.

Inspect the surfaces regularly. Replace the board if the stainless steel is severely deformed, if the silicone is peeling, or if a deep crack traps residue. Store it flat or in a place where it is not at risk of falling.
